This is the perfect summer recipe and is so refreshing! It's perfect for pretty much any occasion. I started by heating the oil in a pan. I then added in the corn you can use 4 ears of fresh corn, shucked, and kernels removed or just 3 cups of thawed frozen corn. (Make sure you drain off the extra water if you are using the frozen corn). Salt the corn to taste and make sure to cook on both sides so that the corn has good color. Then transfer the corn to a serving bowl and add in the jalapeño, garlic, mayonnaise, lime juice, and chile powder. (If you don't like to much spice, you can replace the chile powder with Tajin chile powder). Next, add in the cheese and if you don't like feta you can use parmesan (Parmesan is also the traditional cheese that is served with corn in Mexico). Finally add in the cilantro and green onions. These cupcakes are so beautiful and delicious! They are a chocolate cupcake with a mint frosting decorated with mini chocolate chips and I also topped with some fresh mint leaves from my backyard. I started by preheating the oven to 350° and lining the cupcake pans. I next whisked together the flour, sugar, baking powder, salt and cocoa powder in a large bowl. In another bowl I mixed together the oil, peppermint extract, egg, and buttermilk. I then mixed half of the wet ingredients into the dry and then once combined well the second half. Once it was all mixed I slowly added in the boiling water, then the chocolate chips. Using a ice cream scooper I filled the cupcake liner 2/3 of the way with batter. Once all the batter was used I baked the cupcakes for about 25 minutes. While the cupcakes baked I made the frosting. I started by creaming the butter together in my mixer. Next I poured in the powdered sugar and milk. As soon as the frosting was mixed well I poured in about an 1/4 of of peppermint extract (use 1/8 if u don't want it as strong). Although this recipe is just for vanilla buttercream I used peppermint instead because I was making Mint Chocolate chip flavored cupcakes. I also added some green food dye to it to make it look the color of mint. You can frost your cupcakes however you want but I used an icing tip from my GEMLON Russian Piping Tips Kit. I spooned the frosting into the bag with the tip and tied it shut. I then frosted in a swirling motion up on the cooled cupcakes. I sprinkled the cupcakes with mini chocolate chips and put fresh mint leaves on them from my backyard. These cupcakes look fabulous and taste just like mint chocolate chip ice cream. Along with the beans I added in the tomatoes, avocadoes, onions, corn, pepper, jalapeno, and cilantro. In a separate bowl I mixed together lime juice, red wine vinegar, olive oil, sugar, salt, pepper, and garlic powder. Once the dressing was stirred, I poured it into the bowl and tossed it together. I love making this for breakfast and it could even serve as a great lunch. I started out by assembling and chopping up all the ingredients. Then in a bowl I mixed together the chopped eggs, mayonnaise, capers, dill, mustard, and hot sauce. I next stirred in the bell peppers and celery. Instead of whole wheat bread, I used sourdough, but you can use your favorite type of bread. I toasted a few pieces in my toaster and then put them on plates. I then rubbed the toast with the garlic, olive oil, and pepper. I spooned the egg salad onto the toast so it was covered and then topped it with a sliced avocado. Finally, enjoy! I started out by boiling the water in a large pot. While it heated up I whisked the peanut butter, lime juice, soy sauce, garlic, ginger, and honey together in a large serving bowl. Next I added the pasta to the pot of boiling water and cooked it. I reserved 1/4 cup of the water and stirred it into the peanut sauce. I drained and rinsed the noodles Then I heated up a bag of carrot cubs. I used frozen carrots cubes instead of shredded, but you can shred yours if you want. I heated up the carrots and added them to the bowl with the peanut butter mixture along with the drained noodles. I snapped off the ends of the snow peas and removed their strings. I sliced some peas in half and left some whole. Then I added them into the bowl with noodles and sauce. The last step is serve and enjoy! Thanks to my mom for helping. Conchas are a Mexican sweet bread with a flakey topping and now with this recipe you can make mini ones. I prepped my pans and preheated the oven before i began. I started out by heating up the milk and mixing in 1 tablespoon of the sugar and yeast. While I let it sit J mixed the flour, salt, and the rest of the sugar in my mixer. Once the milk mixtures was done activating I added it in along with the butter, eggs, and vanilla into the mixer. Once it was mixer together and formed a soft ball I put it into an oiled bowl and let it rise for 2 hours. As the dough rose I made the topping. I started by mixing the butter, flour, vanilla, and powdered sugar. I split it into two balls and added some cocoa powder to one of the balls. Once the dough was done rising I rolled it into small balls about the size of an egg. I took a piece of the topping and pressed it into my silicone mat till it was a little bigger than the cupcake surface. I placed it on top of it so it covered it and used a knife to draw a design. (See picture above or on the recipe’s website for inspiration) I decorated all the cupcakes and put them in the cupcake tins. The toasted crispy sour dough bread pairs greatly with the soft, creamy cheeses. I started by mixing the mayo, sour cream, parmesan cheese, mozzarella, cream cheese, and garlic in a bowl. Next I drained and added in the spinach and artichokes. Instead of buttering the outsides of my bread I use mayo instead because it gets the bread nice and crispy, but you can use butter if you want. I spread the mixture onto the bread and toasted it in a pan until the bread was golden. This sandwich is a great way to spice up your lunch and make a grilled cheese even more tasty. I loved this recipe and I hope you do, too. I started by preheating the oven and preparing the cookie sheet. I then in my mixer mixed together 6 tablespoons of butter, 4 tablespoons of brown sugar with 2 tablespoons of white sugar. After it was fluffy I beat in the egg. Then I added the oats, baking powder, flour, baking soda, and salt. I put the mixture on the cookie sheet and baked it for about 13 minutes. I cooled it, then crushed it in my food processor and next mixed in the rest of the butter and sugar. I pressed it into the pie pan and started the filling. I started by whisking the sugars, salt, and milk powder in my stand mixer. I next mixed in the butter, cream, vanilla, and egg yolks. I then poured it into the pie pan once it was all combined. Recipe This was such a delicious and moist cake with an amazing creamy peanut butter frosting. You should definitely try this recipe! I started by preheating the oven and preparing the pans. This recipe is for a square pan cake but I used three 11-inch cake pans instead, so I could have a layered cake. (You don’t have to do this but if you do, you have to bake the cake less and make a double batch of frosting so there will be enough). I next mixed the dry ingredients together in a bowl. I then added the oil, vanilla, and 1 1/4 cups of water. Once it was all mixed I folded in the chocolate chips. I poured the batter in the pans and baked them for about 20 minutes (35 if your using the original recipe). Once they finished baking, I started the frosting. First I combined the eggs whites and sugar on a double boiler and whisked them until the sugar dissolved. I then took the bowl off the heat and then whisked it on high with my electric mixer for 5-6 minutes. Once it was cool and thick I mixed in the peanut butter, salt and vanilla. I then slowly mixed in small chunks of the butter. Next I chilled the frosting for a little bit. (This is optional but I think it helps for frosting the cake).
