This is the perfect summer recipe and is so refreshing! It's perfect for pretty much any occasion. I started by heating the oil in a pan. I then added in the corn you can use 4 ears of fresh corn, shucked, and kernels removed or just 3 cups of thawed frozen corn. (Make sure you drain off the extra water if you are using the frozen corn). Salt the corn to taste and make sure to cook on both sides so that the corn has good color. Then transfer the corn to a serving bowl and add in the jalapeño, garlic, mayonnaise, lime juice, and chile powder. (If you don't like to much spice, you can replace the chile powder with Tajin chile powder). Next, add in the cheese and if you don't like feta you can use parmesan (Parmesan is also the traditional cheese that is served with corn in Mexico). Finally add in the cilantro and green onions. Another alternative to that would be green peppers and chives or whatever other fresh veggies you have on hand. Serve and enjoy! Thanks to my mom for finding the recipe and for helping. Recipe
